For the Garlic and Herb Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the Yukon Gold potatoes into equal-sized chunks for even cooking.

    Cook the Potatoes

    In a large pot, add the chopped potatoes and garlic cloves. Cover with cold water and add 1 tsp of salt.

    Simmer the Potatoes

    Bring the water to a boil over medium-high heat. Once boiling, reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add the unsalted butter and heavy cream.

    Season and Serve

    Using a masher or fork, mash the potatoes and garlic together until smooth and creamy. Stir in the chopped fresh chives, and season with additional salt and black pepper to taste.

    Pat the sea scallops dry with a paper towel to ensure a good sear. Season both sides with salt and black pepper.

    Carefully place the scallops in the skillet, ensuring they are not overcrowded. Sear for 2-3 minutes on each side until golden brown and cooked through.

    Remove the scallops from the skillet and drizzle with fresh lemon juice before serving.
