Salmon

    Prepare the Salmon

    Season the salmon fillets with salt and black pepper on both sides.

    Sear the Salmon

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets skin-side down and cook for 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until cooked through. Remove from skillet and set aside.

Capperi Sauce

    Make the Capperi Sauce

    In the same skillet used for the salmon, reduce heat to medium. Add butter and minced garlic, stirring until fragrant, about 1 minute. Add capers and lemon juice, simmer for another 2-3 minutes. Stir in chopped parsley before serving.

Vegetables

    Prepare the Vegetables

    In a separate saucepan, heat olive oil over medium heat. Add asparagus and cherry tomatoes, season with salt, and sauté for about 5-7 minutes until tender but still crisp.

Mashed Potatoes

    Cook the Potatoes

    Place chopped potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, and salt. Mash until smooth and creamy.
