Grilled Pork Chops with Spinach, Mushrooms, and Brown Mustard Sauce

    Prepare the Pork Chops

    Season the pork chops with salt and black pepper on both sides. Drizzle olive oil over the chops to coat them evenly.

    Grill the Pork Chops

    Preheat your grill to medium-high heat. Place the seasoned pork chops on the grill and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from grill and let rest for 5 minutes.

    Sauté the Spinach and Mushrooms

    In a large skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and cook for 1 minute until fragrant. Add sliced mushrooms and sauté for 4-5 minutes until they are browned. Then, add the spinach and cook until wilted, about 2 minutes.

    Prepare the Brown Mustard Sauce

    In the same skillet with the mushrooms and spinach, pour in 1 cup of chicken broth and add 2 tablespoons of brown mustard. Stir to combine and let simmer for 3-4 minutes until the sauce slightly thickens.

    Plate the Dish

    Place the grilled pork chops on a plate, top with the sautéed spinach and mushrooms, and drizzle the brown mustard sauce over the top. Serve immediately.
