Preparing the Lamb

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Lamb Rack

    Pat the lamb rack dry with paper towels. In a small bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper.

    Season the Lamb

    Rub the olive oil mixture all over the lamb rack, ensuring it is evenly coated.

    Roast the Lamb

    Place the lamb rack on a roasting pan, bone side down. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).

    While the lamb is roasting, wash and chop the carrots, zucchini, bell peppers, and red onion into bite-sized pieces.
