Preparation Instructions

  1. 1

    Grill the Chicken

Preheat your grill to medium heat. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let rest for 5 minutes before slicing.

  2. 2

    Prepare the Vegetables

While the chicken is grilling, wash and dry the spinach leaves and mixed greens. Slice the cherry tomatoes in half and chop the mixed bell peppers into bite-sized pieces. Thinly slice the red onion.

  3. 3

    Grill the Onions

On a separate grill pan or directly on the grill, place the sliced red onions. Grill for about 4-5 minutes, until they are soft and slightly charred. Remove from heat and let cool.

  4. 4

    Assemble the Salad

In a large salad bowl, combine the spinach leaves, mixed greens, cherry tomatoes, grilled mixed bell peppers, and grilled onions. Crumble the goat cheese over the top and add the croutons.

  5. 5

    Add Dressing and Toss

Diced the apple into small pieces and add it to the salad. Drizzle the balsamic dressing over the salad and toss everything together gently until well combined.

  6. 6

    Serve

Slice the grilled chicken breasts and place them on top of the salad. Serve immediately and enjoy!
