Preparing the Lamb

Marinate the Lamb
In a small bowl, mix together minced garlic, chopped fresh rosemary, olive oil, salt, and black pepper. Rub this mixture all over the full rack of lamb, ensuring it's evenly coated. Let it marinate for at least 30 minutes at room temperature.

Preheat Oven
Preheat your oven to 400°F (200°C) while the lamb is marinating.

Roast the Lamb
Place the marinated rack of lamb on a roasting pan. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C). Let it rest for 10 minutes before slicing.

Wash and chop the carrots, zucchini, and bell pepper into bite-sized pieces.

In a large skillet, heat olive oil over medium heat. Add the chopped vegetables along with salt and black pepper. Saute for about 5-7 minutes until tender and slightly caramelized.
