Fillet Preparation

    Season the Steak

    Sprinkle both sides of the filet mignon generously with salt and black pepper. Let it sit at room temperature for 30 minutes to allow the seasoning to penetrate the meat.

    Sear the Steak

    Heat a cast-iron skillet over medium-high heat. Add olive oil and allow it to heat until shimmering. Place the filet mignon in the skillet and sear for 4-5 minutes on one side without moving it.

    Cook the Other Side

    Flip the steak and add butter to the skillet. Baste the filet with the melted butter using a spoon. Cook for an additional 4-5 minutes for medium-rare, adjusting time as necessary for desired doneness.

    Rest the Steak

    Once cooked to desired doneness, remove the filet mignon from the skillet and transfer it to a cutting board. Let it rest for 5-10 minutes before slicing to allow juices to redistribute.
