Cook the Penne Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

Prepare the Chicken
If not already grilled, season the chicken breasts with salt and black pepper. Grill over medium heat until fully cooked, about 6-7 minutes per side. Remove from grill, slice, and set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are tender.

Add Sundried Tomatoes and Brandy
Add the chopped sundried tomatoes to the skillet and continue to sauté for another 2 minutes. Pour in the brandy and let it simmer for 2-3 minutes until the alcohol evaporates.

Make the Cream Sauce
Reduce the heat to low. Stir in the heavy cream and let the mixture simmer for 5 minutes, stirring occasionally. Add salt and black pepper to taste.

Combine Everything
Add the cooked penne pasta and grilled chicken slices to the sauce. Toss everything together until well coated. Stir in the grated Parmesan cheese and chopped basil.

Serve the chicken penne hot, garnished with additional Parmesan cheese and basil if desired.
