Method

Burgers

  1. 1

    Prepare the Burger Patties

In a large bowl, combine ground short rib, ground brisket, and ground chuck. Season with salt and black pepper. Mix gently until well combined.

  2. 2

    Form the Patties

Divide the meat mixture into 4 equal portions and shape each portion into a round patty, about 3/4 inch thick. Make a slight indentation in the center of each patty with your thumb to prevent them from puffing up during cooking.

  3. 3

    Cook the Patties

Preheat your grill or stovetop skillet over medium-high heat. Once hot, place the patties on the grill or skillet. Cook for about 4-5 minutes on one side, then flip and cook for an additional 3-4 minutes for medium doneness. If using cheese, add a slice on top of each patty during the last minute of cooking.

  4. 4

    Toast the Buns

While the burgers are cooking, slice the burger buns and toast them on the grill or in a toaster until golden brown.

  5. 5

    Assemble the Burgers

On the bottom half of each bun, place a lettuce leaf. Add the cooked burger patty with cheese, a slice of tomato, and top with sliced pickles. Add ketchup, mustard, and mayonnaise to taste before placing the top half of the bun.

  6. 6

    Serve

Serve the burgers immediately with a side of French fries, onion rings, or soup of the day.
