Toast the Baguette
Place the baguette slices on a baking sheet, oil side up. Bake in the preheated oven for about 5-7 minutes or until they are lightly golden and crispy.

Prepare the Toppings
While the bread is toasting, dice the vine ripe tomatoes and place them in a medium bowl. Tear the fresh mozzarella into small pieces and add it to the bowl with the tomatoes.

Mix the Topping Ingredients
Add the chimichurri sauce, balsamic vinegar, fresh basil leaves (torn), salt, and black pepper to the tomato and mozzarella mixture. Gently toss everything together until well combined.

Assemble the Bruschetta
Remove the toasted baguette slices from the oven. Spoon the tomato and mozzarella mixture generously onto each slice.

Serve
Drizzle a little extra chimichurri or balsamic vinegar if desired, and serve immediately while the crostini are warm.
