Salad Preparation

    Prepare the Salmon

    Season the salmon fillets generously with blackening seasoning on both sides. Heat a non-stick skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the salmon fillets skin-side down.

    Cook the Salmon

    Cook the salmon for about 4-5 minutes on each side, or until the salmon is cooked through and has a charred crust. Remove from heat and let it rest.

    Prepare the Greens

    In a large bowl, combine the mixed greens, sliced bell peppers, halved cherry tomatoes, feta cheese crumbles, and croutons. Toss gently to mix all ingredients.

    Fry the Eggs

    In the same skillet used for the salmon, add a little more oil if needed and crack the eggs into the pan. Fry them to your desired doneness (sunny side up or over easy).

    Assemble the Salad

    Place a generous portion of the mixed greens on each plate. Top with the cooked blackened salmon fillet, and place the fried egg on top. Drizzle with your choice of vinaigrette.
