White Creamy Mushroom and Scallop Sauce

Halibut

    Prepare the Halibut

    Season the halibut fillets with salt and black pepper on both sides.

    Sear the Halibut

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the halibut fillets skin-side down and sear for 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes or until the fish is opaque and flakes easily with a fork. Remove from skillet and keep warm.

Potato Puree

    Prepare the Potatoes

    Peel and chop the russet potatoes into even-sized chunks. Place in a pot of salted boiling water.

    Cook the Potatoes

    Boil the potatoes for about 15-20 minutes or until fork-tender. Drain and return to the pot.

    Make the Puree

    Add butter, heavy cream, and salt to the drained potatoes. Mash with a potato masher or use a food processor for a smoother consistency. Keep warm.

White Creamy Mushroom and Scallop Sauce

    Sauté the Mushrooms

    In the same skillet used for the halibut, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then add sliced mushrooms and cook until they are browned and have released their moisture, about 5 minutes.

    Add Scallops

    Add the cleaned scallops to the skillet and sear for 2-3 minutes until they become opaque.

    Deglaze the Pan

    Pour in the white wine, scraping the bottom of the pan to release any browned bits. Allow to simmer for 2-3 minutes until slightly reduced.

    Finish the Sauce

    Stir in heavy cream, salt, and black pepper. Simmer for another 3-4 minutes until the sauce thickens slightly. Stir in chopped parsley before serving.
