Prepare the Halibut
Season the halibut fillets with salt and black pepper on both sides.

Sear the Halibut
In a large skillet, heat olive oil over medium-high heat. Once hot, add the halibut fillets skin-side down and sear for 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes or until the fish is opaque and flakes easily with a fork. Remove from skillet and keep warm.

Make the Puree
Add butter, heavy cream, and salt to the drained potatoes. Mash with a potato masher or use a food processor for a smoother consistency. Keep warm.
White Creamy Mushroom and Scallop Sauce

Deglaze the Pan
Pour in the white wine, scraping the bottom of the pan to release any browned bits. Allow to simmer for 2-3 minutes until slightly reduced.

Finish the Sauce
Stir in heavy cream, salt, and black pepper. Simmer for another 3-4 minutes until the sauce thickens slightly. Stir in chopped parsley before serving.
