Prepare the Rice Filling
In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the rice, salt, black pepper, and 1/2 cup of water. Cook for about 10 minutes until the rice absorbs the water. Remove from heat and stir in parsley, dill, and lemon juice. Allow it to cool.

Prepare the Grape Leaves
If using jarred grape leaves, rinse them in cold water to remove excess salt. If using fresh grape leaves, blanch them in boiling water for 2-3 minutes until soft. Drain and set aside.

Stuff the Grape Leaves
Lay a grape leaf vein side up on a flat surface. Place a tablespoon of the rice filling at the base of the leaf. Fold in the sides and roll tightly from the base to the tip. Repeat with the remaining leaves and filling.

Serve
Allow the stuffed grape leaves to cool. Serve them cold as an appetizer or snack, drizzled with extra lemon juice if desired.
