Falafel Preparation

Soak Chickpeas
Rinse the dried chickpeas and soak them in water overnight (or at least 8 hours) until they are soft.

Prepare Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms.

Shape Falafel
Using your hands, take a small amount of the mixture and form it into small balls or patties, about the size of a golf ball.

Heat Oil
In a deep frying pan, heat oil over medium heat until it reaches about 350°F (175°C).

Fry Falafel
Carefully drop the falafel balls into the hot oil. Fry them in batches for about 3-4 minutes or until golden brown and crispy on the outside. Remove and drain on paper towels.

Serve
Serve the falafel hot with pita bread. You can add toppings like tahini sauce, pickles, or fresh vegetables.
