Method

Preparation

    Marinate the Beef

    In a bowl, combine the olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, and lemon juice. Add the beef cubes and mix until well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Greek Salad

    In a large bowl, combine the diced cucumber, diced tomato, sliced red onion, crumbled feta, and black olives. Drizzle with olive oil and red wine vinegar, then season with salt and pepper to taste. Toss well and set aside.

    Prepare the Hummus

    In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, water, and salt. Blend until smooth. Adjust the consistency by adding more water if needed. Set aside.

    Cook the Rice

    In a medium pot, bring the water to a boil. Add the rice and salt, reduce heat to low, cover, and cook for 15-20 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Grilling

    Grill the Kababs

    Preheat the grill to medium-high heat. Thread the marinated beef onto the skewers, alternating with green pepper quarters and tomato halves. Grill for 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness.

    Grill the Vegetables

    Place the remaining green pepper quarters and tomato halves directly on the grill. Grill for 5-7 minutes until lightly charred.

Serving

    Assemble the Plate

    On a large plate, serve the grilled beef kababs alongside the grilled vegetables, a portion of rice, a helping of Greek salad, hummus, pita bread, and a drizzle of tahini sauce.
