Preparation and Cooking Instructions

    Marinate the Pork

    In a bowl, combine garlic, oregano, lime juice, olive oil, salt, and pepper. Add the pork ribeye and coat well. Marinate for at least 1 hour or overnight for best flavor.

    Cook the Plantains

    Peel and slice the plantains into fries. Heat oil in a pan over medium heat and fry the plantains until golden brown. Sprinkle with brown sugar and cook for an additional minute. Set aside.

    Cook the Ancient Grains

    Prepare the ancient grains according to package instructions. Set aside once cooked.

    Grill the Vegetables and Pineapple

    Slice the zucchini and squash. Grill the zucchini, squash, and pineapple slice until tender and slightly charred.

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and grill for about 5-7 minutes on each side or until cooked to your desired doneness.

    Prepare the Mojo Gravy

    In a small saucepan, combine chicken broth and cornstarch mixed with water. Heat over medium heat until thickened, stirring continuously.

    Plate the grilled pork ribeye with plantain fries, ancient grains, grilled vegetables, and pineapple. Drizzle with mojo gravy before serving.
