Prepare the Steak
Take the filet mignon steaks out of the refrigerator and let them rest at room temperature for about 30 minutes before cooking.

Season the Steaks
Rub the steaks with olive oil, then season both sides generously with salt and black pepper.

Sear the Steaks
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks. Sear for about 4-5 minutes on each side, until a nice brown crust forms.

Add Aromatics
During the last minute of cooking, add butter, smashed garlic cloves, rosemary, and thyme to the skillet. Spoon the melted butter over the steaks.

Rest the Steaks
Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Add Garlic
During the last 5 minutes of cooking, add the garlic cloves to the pot with the potatoes.

Add butter, heavy cream, salt, and black pepper to the mashed potatoes. Mix until creamy and smooth.
