Tuna Tartare

Method

Preparation

  1. 1

    Prepare the Tuna

Cut the Yellowfin Tuna into small, 1/4-inch cubes and place them in a medium bowl.

  2. 2

    Marinate the Tuna

Add the soy sauce and sesame oil to the bowl with tuna. Toss gently to coat the tuna evenly. Cover and refrigerate for 15 minutes.

  3. 3

    Prepare the Avocado

While the tuna is marinating, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with lime juice and a pinch of salt until creamy.

  4. 4

    Prepare the Wasabi Cream

In a small bowl, mix the wasabi cream until smooth. Adjust the wasabi to taste if necessary.

  5. 5

    Prepare the Citrus Ponzu

Pour the citrus ponzu sauce into a small serving bowl.

  6. 6

    Assemble the Dish

On a serving plate, create a base layer with the crushed avocado. Top with the marinated tuna, then drizzle the wasabi cream over the top.

  7. 7

    Garnish and Serve

Sprinkle the wasabi peas over the tartare for crunch. Serve with wonton crackers on the side for dipping.
