    Make the Pie Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut the unsalted butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Divide the dough into two equal halves, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling

    In a large bowl, combine sliced apples with lemon juice, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, all-purpose flour, and vanilla extract. Toss until apples are evenly coated.

Assembling and Baking
