Topping (optional)

Method

Crust

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and ground cinnamon until well mixed.

  2. 2

    Press into Pie Dish

Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for 10 minutes, then remove and let cool.

Filling

  1. 3

    Mix the Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar and beat until well combined.

  2. 4

    Add Pumpkin and Sour Cream

Mix in the pumpkin puree and sour cream until fully incorporated.

  3. 5

    Incorporate Eggs and Spices

Add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract, ground cinnamon, nutmeg, and ginger until smooth.

  4. 6

    Fill the Crust

Pour the pumpkin cheesecake filling into the cooled crust, spreading it evenly.

Baking

  1. 7

    Bake the Cheesecake

Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set and only slightly jiggly.

  2. 8

    Cool the Cheesecake

Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then, remove it from the oven and refrigerate for at least 4 hours, or overnight for best results.

Topping

  1. 9

    Prepare the Topping

If desired, top the chilled cheesecake with whipped cream and sprinkle with ground cinnamon before serving.
