Hummus

Method

Prepare the Hummus

  1. 1

    Combine Ingredients

In a food processor, add the canned white beans, fresh basil leaves, garlic cloves, lemon juice, olive oil, salt, and black pepper.

  2. 2

    Blend

Pulse the mixture until smooth and creamy, scraping down the sides as needed. If the hummus is too thick, add a little water or extra olive oil to reach the desired consistency.

  3. 3

    Taste and Adjust

Taste the hummus and add more salt, lemon juice, or garlic if needed. Blend again until well combined.

Prepare the Grilled Pita and Crudités

  1. 4

    Grill the Pita

Preheat a grill or grill pan over medium heat. Cut the pita bread into triangles and lightly brush both sides with olive oil.

  2. 5

    Grill

Place the pita triangles on the grill and cook for about 2-3 minutes on each side, or until grill marks appear and the pita is warm and slightly crispy.

  3. 6

    Prepare the Vegetables

While the pita is grilling, prepare your crudités by slicing the cucumber, cutting the carrots into sticks, and the bell pepper into strips.

  4. 7

    Serve

Arrange the grilled pita, crudités, and Kalamata olives on a serving platter. Drizzle with extra olive oil and serve alongside the pistou white bean hummus.
