Simple Syrup Preparation

Make the Simple Syrup
In a saucepan, combine 1 cup of granulated sugar with 1 cup of water. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let it cool. This simple syrup can be stored in the refrigerator for up to a month.

Prepare the Pineapple Sage
Wash the fresh pineapple sage leaves gently under running water. Pat dry with a paper towel and set aside.

Mix the Ingredients
In a large pitcher, combine the prepared simple syrup (about 1/2 cup), 2 cups of fresh pineapple diced into chunks, and 1 cup of fresh lime juice. Using a muddler or the back of a spoon, gently muddle the ingredients to release the flavors of the pineapple sage and lime.

Add Ginger Ale
Slowly pour in 4 cups of ginger ale to the pitcher. Stir gently to combine without losing the carbonation.

Fill glasses with ice and pour the Pineapple Sage Island Breeze mixture over the ice. Garnish each drink with a few fresh pineapple sage leaves and a slice of pineapple if desired.
