Croquettes

    Prepare the Potatoes

    Peel and cut the Russet potatoes into quarters. Place them in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Mash them until smooth. Allow to cool slightly.

    Mix Ingredients

    In a large bowl, combine the mashed potatoes, grated Pecorino Romano cheese, eggs, flour, salt, and black pepper. Mix until well combined.

    Form the Croquettes

    Using your hands, shape the mixture into small round balls or patties, about 2 inches in diameter. Roll each croquette in breadcrumbs until fully coated.

    Fry the Croquettes

    In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the croquettes in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    In a small bowl, mix together the sour cream, prepared horseradish, and lemon juice until smooth.

    Add salt to taste, mixing well to combine.
