Method

Preparation for Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Chicken

    Pat the chicken halves dry with paper towels. Rub them with olive oil, and season generously with salt, black pepper, garlic powder, and paprika.

    Roast the Chicken

    Place the seasoned chicken halves in a roasting pan, skin side up. Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown. Baste with juices halfway through cooking.

Preparation for Cheddar Grits

    Cook Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt, stirring continuously. Reduce heat to low and cook for 20-25 minutes, stirring occasionally, until thickened.

    Add Cheese and Butter

    Once the grits are cooked, stir in the shredded cheddar cheese and butter until melted and creamy. Adjust seasoning if necessary.

Preparation for Garlic Sautéed Spinach

    Sauté Spinach

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Cook Spinach

    Add the fresh spinach to the skillet and sauté until wilted, about 3-4 minutes. Season with salt and black pepper to taste.

Preparation for Grand Marnier Orange Aleppo Glaze

    Prepare Glaze

    In a small saucepan, combine 0.5 cup of Grand Marnier, 2 tbs of honey, and 1 tsp of Aleppo pepper. Bring to a simmer over medium heat and allow it to reduce for about 5-7 minutes until slightly thickened.

Assembly

    Serve the Dish

    On a plate, serve a portion of the cheesy grits topped with the roasted chicken half. Drizzle the Grand Marnier glaze over the chicken and add a side of garlic sautéed spinach. Garnish with Rich Farms microgreens.
