Method

For the Oven Roasted Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Chicken

    In a large bowl, combine olive oil, minced garlic, salt, black pepper, paprika, and fresh thyme. Rub this mixture thoroughly over the chicken halves.

    Roast the Chicken

    Place the chicken halves in a roasting pan and roast in the preheated oven for 45-55 minutes or until the internal temperature reaches 165°F (74°C).

For the Cheddar Grits

    Cook the Grits

    In a medium saucepan, bring the water to a boil. Stir in the grits and salt, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in the shredded cheddar cheese and butter until melted and smooth.

For the Garlic Sautéed Spinach

    Sauté the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Spinach

    Add the fresh spinach, salt, and black pepper to the skillet. Cook for 3-5 minutes until wilted, stirring occasionally.

For the Grand Mariner Orange Aleppo Glaze

    Make the Glaze

    In a small saucepan, combine Grand Mariner, honey, and Aleppo pepper. Bring to a simmer and cook for 5-7 minutes until slightly thickened.

To Serve

    Plate the Dish

    On a plate, serve a portion of the cheddar grits, topped with roasted chicken half, sautéed spinach on the side, and drizzle with the Grand Mariner orange Aleppo glaze. Garnish with Rich Farms microgreens.
