Pimento Cheese Preparation

Mix the Cheeses
In a large mixing bowl, blend together the sharp cheddar cheese and cream cheese until smooth.

Add Pimentos & Mayonnaise
Fold in the pimentos and mayonnaise, mixing until well combined.

Season the Mixture
Add garlic powder, onion powder, salt, black pepper, and hot sauce. Mix until evenly distributed.

Refrigerate
Cover the bowl with plastic wrap and refrigerate for at least one hour to allow flavors to meld.
Potato Chips Preparation

Slice the Potatoes
Wash and thinly slice gold and purple potatoes using a mandolin or sharp knife.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add potato slices in small batches to the hot oil. Fry until golden brown and crispy, about 3-4 minutes.

Remove chips with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

In a large bowl, combine cauliflower, carrot, green bell pepper, and red bell pepper.

In a separate bowl, whisk together olive oil, white vinegar, dried oregano, and salt until well combined.

Pour the pickling solution over the vegetable mixture, ensuring all vegetables are coated. Cover and refrigerate for at least 24 hours before serving.
