For the Pimento Cheese

    Prepare the Cheese Mixture

    In a large mixing bowl, combine the sharp cheddar cheese, softened cream cheese, and mayonnaise. Blend together until the mixture is smooth and creamy.

    Add Flavorings

    Stir in the diced pimentos, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until all ingredients are well incorporated.

    Chill

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

For the Chips

    Prepare the Potatoes

    Wash and slice the gold and purple potatoes into thin rounds (about 1/8 inch thick). Pat them dry with paper towels.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add potato slices in batches to the hot oil, frying until golden brown and crispy, about 3-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

    While still hot, sprinkle salt over the chips to taste.

    Serve the chilled pimento cheese in a bowl alongside the freshly made gold and purple potato chips. Add a serving of giardiniera and hot sauce on the side for garnish.
