Preparing the Dough

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead the Dough
Mix the ingredients until a shaggy dough forms. Transfer it to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours or until doubled in size.
Baking the Focaccia

Preheat Oven
Preheat your oven to 425°F (220°C).

Prepare Baking Sheet
Grease a baking sheet with olive oil. Once the dough has risen, punch it down to release the air and shape it into a rectangle to fit the baking sheet.

Add Toppings
Transfer the dough to the prepared baking sheet. Dimple the surface with your fingers and drizzle more olive oil on top. Sprinkle with fresh rosemary, sea salt, cherry tomatoes, and olives.

Second Rise
Let the dough rise again for about 20-30 minutes while the oven is preheating.

Bake
Bake in the preheated oven for 20-25 minutes, or until golden brown and the edges are crispy.

Remove from the oven and drizzle with balsamic glaze. Allow to cool slightly before slicing and serving.
