Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 325°F (163°C).

  2. 2

    Prepare the Ham

Score the surface of the ham in a diamond pattern, about 1/2 inch deep, and stud it with whole cloves, placing them at the intersections of the cuts.

Making the Glaze

  1. 3

    Combine Ingredients

In a medium saucepan over medium heat, combine honey, chipotle peppers in adobo sauce, brown sugar, Dijon mustard, soy sauce, garlic powder, and ground black pepper.

  2. 4

    Simmer the Glaze

Bring the mixture to a simmer, stirring frequently until the sugar is dissolved and the glaze is slightly thickened, about 5-7 minutes.

Baking the Ham

  1. 5

    Apply the Glaze

Place the ham on a roasting rack in a large roasting pan. Brush 1/3 of the glaze over the ham.

  2. 6

    Bake the Ham

Cover the ham loosely with aluminum foil and bake for about 1.5 to 2 hours, or until the internal temperature reaches 140°F (60°C).

  3. 7

    Glaze Every 30 Minutes

Every 30 minutes, remove the foil and baste the ham with more glaze, until you have used it all.

  4. 8

    Finish Baking

Remove the foil during the last 30 minutes of cooking to allow the glaze to caramelize and the ham to brown.

Serving

  1. 9

    Let it Rest

Once cooked, remove the ham from the oven and let it rest for at least 15-20 minutes before slicing.

  2. 10

    Slice and Serve

Slice the ham and serve warm, drizzling any remaining glaze over the top.
