Method

For the Herb Marinated Grilled Salmon

    Prepare the Marinade

    In a bowl, combine olive oil, chopped parsley, chopped dill, minced garlic, lemon juice, salt, and black pepper. Mix well.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over the salmon. Ensure the fillets are well-coated. Cover and refrigerate for at least 30 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Remove salmon from the marinade and grill for about 4-5 minutes on each side, or until cooked through.

For the Lemon Pepper Roasted Yukon Gold Potatoes

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    In a large bowl, toss the diced Yukon Gold potatoes with olive oil, lemon zest, lemon pepper seasoning, and salt until evenly coated.

    Roast the Potatoes

    Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, tossing occasionally.

For the Grilled Broccolini

    In a bowl, toss the broccolini with olive oil, salt, and black pepper.

    Place the broccolini on the grill over medium heat. Grill for about 3-4 minutes, turning occasionally, until tender and slightly charred.
