Preparation of the Vinaigrette

    Make the Cranberry Vinaigrette

    In a bowl, whisk together cranberry juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined. Set aside.

Grilling the Salmon

    Prepare the Salmon

    Preheat the grill to medium-high heat. In a small bowl, mix olive oil, lemon juice, salt, and black pepper. Brush this mixture over the salmon fillets.

    Grill the Salmon

    Place the salmon fillets on the grill and cook for about 6-8 minutes per side, or until the salmon is cooked through and has nice grill marks. Remove from the grill and let rest for a few minutes.

Assembling the Salad

    Combine Salad Ingredients

    In a large salad bowl, combine fresh spinach, Boston lettuce, Gorgonzola cheese, dried cranberries, toasted almonds, and potato straws.
