Main Ingredients

Seasonal Vegetables

Lemon Butter Sauce

Method

Preparation

  1. 1

    Prepare the Salmon

Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt and black pepper.

  2. 2

    Prep the Vegetables

Trim the asparagus, slice the bell peppers into strips, and cut the zucchini into rounds. Set aside.

  3. 3

    Make the Lemon Butter Sauce

In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in lemon juice and chopped parsley, then remove from heat.

Grilling

  1. 4

    Grill the Salmon

Preheat the grill to medium-high heat. Place the salmon fillets on the grill and cook for about 4-5 minutes per side, or until the salmon flakes easily with a fork.

  2. 5

    Grill the Vegetables

While the salmon is grilling, toss the asparagus, bell peppers, zucchini, and cherry tomatoes with olive oil and season with salt and pepper. Grill them in a vegetable basket or directly on the grill for about 5-7 minutes, until tender and slightly charred.

Serving

  1. 6

    Plate the Dish

Once the salmon and vegetables are cooked, place the salmon fillet on a plate, arrange the grilled vegetables alongside, and drizzle the lemon butter sauce over the salmon.

  2. 7

    Serve and Enjoy

Garnish with additional parsley if desired and serve with lemon wedges on the side.
