Rub Preparation

    Make the Rub

    In a small skillet over medium heat, toast the coriander seeds and black peppercorns until fragrant, about 3-5 minutes. Let cool slightly, then grind to a fine powder using a spice grinder or mortar and pestle. Mix with salt and garlic powder.

Steak Preparation

    Season the Steaks

    Rub the KC Strip steaks with olive oil and then coat generously with the coriander and black pepper rub. Let the steaks sit at room temperature for about 30 minutes before grilling.

    Grill the Steaks

    Preheat a grill to high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and sprinkle with grated Pecorino Romano cheese. Let rest for 5 minutes before slicing.

Potato Croquettes Preparation

    Prepare the Potatoes

    Boil the potatoes until tender, about 15-20 minutes. Drain and let cool slightly. Peel and mash the potatoes in a bowl.

    Form Croquettes

    Mix in the egg, salt, and black pepper into the mashed potatoes. Form the mixture into small balls or patties.

    Coat and Fry

    Roll each croquette in bread crumbs until fully coated. In a deep pan, heat oil over medium heat. Fry the croquettes until golden brown, about 3-4 minutes each side. Drain on paper towels.

Mushroom Bordelaise Preparation

    Sauté Mushrooms

    In a skillet, melt butter over medium heat. Add finely chopped shallots and sauté until translucent. Add mixed mushrooms and cook until softened, about 5-7 minutes.

    Make Bordelaise Sauce

    Pour in the red wine and let reduce by half. Add beef broth and thyme, simmer for about 10 minutes until the sauce thickens. Season to taste.

Grilled Asparagus Preparation

    Prepare Asparagus

    Trim the tough ends of the asparagus and toss with olive oil and salt. Preheat the grill to medium-high heat.

    Grill Asparagus

    Place asparagus on the grill and cook for about 5-7 minutes, turning occasionally until tender and charred. Remove from grill and sprinkle with chopped chives before serving.
