Method

Grilled Filet Mignon

    Prepare the Steaks

    Season the filet mignon steaks with salt and black pepper on both sides. Drizzle olive oil over the steaks and rub it in to coat evenly.

    Grill the Steaks

    Preheat the grill to high heat. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your preferred doneness. Remove from the grill and let rest for 5 minutes before serving.

Rosemary Whipped Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into even chunks. In a large pot of salted boiling water, add the potatoes and cook until fork-tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, chopped rosemary, and salt. Using a potato masher or mixer, whip the potatoes until smooth and creamy.

Fried Onion Straws

    Soak the Onions

    In a bowl, soak the thinly sliced onions in buttermilk for at least 30 minutes.

    Prepare the Batter

    In a separate bowl, mix together the flour, cornstarch, salt, and black pepper.

    Fry the Onions

    Heat vegetable oil in a deep pan over medium-high heat. Dredge the soaked onions in the flour mixture, shaking off excess. Fry in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

French Green Beans

    Blanch the Green Beans

    Bring a pot of salted water to a boil. Add the French green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath.

    Sauté the Green Beans

    In a skillet, melt butter over medium heat. Add the drained green beans, season with salt and black pepper, and sauté for 2-3 minutes until heated through.

Gorgonzola Butter

    Prepare the Gorgonzola Butter

    In a small bowl, mix together softened butter and crumbled Gorgonzola cheese until well combined. Set aside.

Red Wine Demi-Glace

    Cook the Demi-Glace

    In a saucepan, melt 1 tablespoon of butter over medium heat. Add minced shallots and sauté until translucent. Pour in red wine and beef stock, bringing to a boil. Reduce heat and simmer until the sauce thickens, about 15-20 minutes.
