Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the semolina flour and eggs. Gradually add water as needed until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Roll and Cut

    After resting, divide the dough into quarters. Roll out each quarter into thin sheets using a pasta machine or rolling pin. Cut the sheets into squares (about 2x2 inches). Roll each square around a wooden dowel or a pasta machine attachment to form the garganelli shape.

Sausage and Pepperonata Preparation

    Cook the Sausage

    In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into pieces, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables

    In the same skillet, add chopped onion and minced garlic. Sauté until the onion becomes translucent. Add sliced bell peppers, salt, black pepper, and balsamic vinegar. Cook until the peppers are tender, about 8-10 minutes.

    Combine Sausage and Vegetables

    Return the cooked sausage to the skillet with the sautéed vegetables. Stir well and cook for an additional 2 minutes. Set aside.

Gorgonzola Cream Sauce Preparation

    Make the Cream Sauce

    In a saucepan over medium heat, combine heavy cream, Gorgonzola cheese, garlic powder, salt, and black pepper. Stir continuously until the cheese is melted and the sauce is smooth. Remove from heat.

Combining Ingredients

    Cook the Garganelli

    Bring a large pot of salted water to a boil. Add the garganelli and cook for 3-4 minutes until al dente. Drain and reserve a little pasta water.

    Mix Everything Together

    In a large bowl, combine the cooked garganelli, sausage and pepperonata mixture, fresh spinach, and basil. Pour the Gorgonzola cream sauce over and toss gently. Add reserved pasta water if needed to loosen the sauce.

Serving

    Plate the Dish

    Serve the garganelli in bowls, garnishing with Pecorino cheese and red pepper flakes to taste. Enjoy your delicious Garganelli!
