Candied Bacon

    Prepare the Bacon

    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Coat the Bacon

    In a bowl, mix together the brown sugar and black pepper. Coat each slice of bacon with the mixture and place them on the prepared baking sheet.

    Bake the Bacon

    Bake in the preheated oven for 15-20 minutes or until the bacon is crispy and caramelized. Remove from the oven and let cool.

Deviled Egg Filling

    Boil the Eggs

    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat and cover for 10-12 minutes.

    Cool and Peel

    After the eggs have sat, transfer them to an ice bath to cool for about 5 minutes. Peel the eggs once cooled.

    Prepare the Filling

    Cut the eggs in half lengthwise and scoop out the yolks into a mixing bowl. Add mayonnaise, Dijon mustard, pickle juice, salt, and black pepper. Mash together until smooth.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

Pickled Mustard Seed

    Soak the Mustard Seeds

    In a bowl, combine mustard seeds with 1 cup of water. Let soak for at least 8 hours or overnight.

    Pickle the Mustard Seeds

    In a saucepan, combine the soaked mustard seeds, white vinegar, sugar, and remaining water. Bring to a boil, then reduce heat and simmer for 10 minutes.

    Cool and Store

    Remove from heat and let cool. Transfer to a jar and refrigerate for at least 24 hours before using.

Garnish

    Chop the Chives

    Finely chop the chives to use as a garnish.

    Assemble the Dish

    Top each deviled egg with a piece of candied bacon, a few pickled mustard seeds, and a sprinkle of chopped chives.
