Method

Egg Preparation

    Boil the Eggs

    Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover and remove from heat. Let sit for 12 minutes.

    Cool and Peel

    After 12 minutes, transfer the eggs to an ice bath to cool for about 5 minutes. Once cool, peel the eggs and slice them in half lengthwise, removing the yolks into a bowl.

Candied Bacon

    Prepare the Oven

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make Candied Bacon

    In a bowl, mix the brown sugar, maple syrup, and black pepper. Coat each bacon strip in the mixture and lay them on the baking sheet.

    Bake the Bacon

    Bake in the preheated oven for 15-20 minutes, or until crispy and caramelized. Remove and let cool on a wire rack.

Pickled Mustard Seed

    Pickle the Mustard Seeds

    In a saucepan, combine mustard seeds, vinegar, sugar, and water. Bring to a simmer over medium heat, stirring occasionally. Cook for 10-15 minutes, until the seeds have absorbed most of the liquid. Remove from heat and let cool.

Assembly

    Prepare Filling

    Mash the egg yolks in the bowl and mix in the pickled mustard seeds (drained) and a pinch of salt to taste.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

  3. 9

    Top with Bacon and Chives

    Crumble the cooled candied bacon on top of each filled egg and sprinkle with chopped chives.
