Candied Bacon

    Prepare the Bacon

    Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.

    Coat the Bacon

    In a shallow dish, mix together the brown sugar and black pepper. Dredge each slice of bacon in the sugar mixture, coating thoroughly.

    Bake the Bacon

    Lay the coated bacon strips on the wire rack and bake in the preheated oven for 15-20 minutes, or until crispy and caramelized. Remove from the oven and let cool.

Pickled Mustard Seed

    Rinse the Mustard Seeds

    In a fine-mesh sieve, rinse the yellow mustard seeds under cold water and place them in a medium saucepan.

    Pickle the Seeds

    Add the white vinegar, sugar, and water to the saucepan with the mustard seeds. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 10 minutes. Remove from heat and let cool.

    Store the Pickled Seeds

    Transfer the pickled mustard seeds to a clean jar and refrigerate for at least an hour before using.

Deviled Egg Filling

    Boil the Eggs

    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover and remove from heat. Let sit for 12 minutes.

    Cool and Peel

    After 12 minutes, transfer the eggs to an ice bath to cool for 5 minutes. Peel the eggs and slice them in half lengthwise.

    Make the Filling

    Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, and black pepper. Mash and mix until smooth.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

Assembly

    Assemble the Deviled Eggs

    Top each filled egg half with a spoonful of pickled mustard seeds and a piece of candied bacon.

    Garnish

    Sprinkle chopped chives over the top for garnish before serving.
