Method

Preparation

  1. 1

    Prepare the Chicken

Cut the chicken breast into strips, approximately 1 inch wide. Season the strips with salt and black pepper, ensuring they are evenly coated.

Batter Preparation

  1. 2

    Make the Batter

In a mixing bowl, combine the all-purpose flour, coconut flakes, and a pinch of salt. In a separate bowl, whisk together the egg and milk. Gradually add the egg mixture to the flour mixture and stir until just combined.

Frying

  1. 3

    Heat the Oil

In a large pot or deep skillet, heat the vegetable or coconut oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Fry the Chicken Strips

Dip each seasoned chicken strip into the batter, ensuring it is fully coated. Carefully place the strips into the hot oil, cooking in batches to avoid overcrowding. Fry for 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to remove the strips and place them on a paper towel-lined plate to drain excess oil.

Serving

  1. 5

    Serve with Dipping Sauce

Plate the coconut fried chicken strips and serve them hot with a side of hot mustard for dipping.
