Brussels Sprouts Preparation

    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and remove any outer leaves that are wilted. Cut the Brussels sprouts in half.

    Batter the Brussels Sprouts

    In a bowl, mix the flour, salt, and pepper. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs. Dip each Brussels sprout half first in the flour mixture, then in the egg, and finally coat it with breadcrumbs.

Pickling Shallots

    Slice and Pickle the Shallots

    Thinly slice the shallots and place them in a jar. In a saucepan, combine vinegar, sugar, salt, and water. Bring to a boil, then pour the hot mixture over the shallots in the jar. Let cool and refrigerate for at least 30 minutes.

Making the Dressing

    Prepare the Dressing

    In a bowl, combine the Pecorino Romano cheese, mayonnaise, lemon juice, black peppercorns, and garlic powder. Mix well until smooth and creamy.

Frying Brussels Sprouts

    Fry the Brussels Sprouts

    In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the battered Brussels sprout halves in batches. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Plating

    Serve and Garnish

    On a serving plate, arrange the fried Brussels sprouts. Drizzle with the Pecorino peppercorn dressing, top with pickled shallots, and sprinkle chopped chives over the top. Serve immediately.
