Method

Braised Short Ribs

    Prepare the Short Ribs

    Season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Add minced garlic and cook for an additional minute.

    Add Liquids

    Pour in the beef broth and Guinness beer, scraping up any browned bits from the bottom of the pot.

    Braise the Ribs

    Return the short ribs to the pot along with bay leaves and thyme. Bring to a simmer, cover, and reduce heat to low. Cook for about 2.5 to 3 hours, until the meat is tender.

Pecorino Potato Croquettes

    Boil the Potatoes

    In a large pot, boil the diced potatoes until fork-tender, about 15-20 minutes. Drain and allow to cool slightly.

    Mash the Potatoes

    Mash the potatoes and mix in the grated Pecorino cheese, beaten eggs, salt, and black pepper until well combined.

    Form the Croquettes

    Shape the potato mixture into small balls or patties.

    Coat the Croquettes

    Dredge each croquette in flour, dip in beaten eggs, and then coat with bread crumbs.

    Fry the Croquettes

    In a large skillet, heat oil over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Grilled Broccolini

    Preheat a grill or grill pan over medium heat. Toss the broccolini with olive oil, salt, and black pepper.

    Grill the broccolini for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Guinness Demi-Glace

    Prepare the Demi-Glace

    In a saucepan, combine beef stock and Guinness beer. Bring to a simmer over medium heat. Reduce the mixture by half, about 15-20 minutes.

    Finish the Sauce

    Stir in butter, salt, and black pepper until the sauce is smooth and glossy.
