    Prepare the Apples

    Peel, core, and slice the apples into thin wedges. Measure out 6 cups of sliced apples and place them in a large bowl.

    Mix the Filling Ingredients

    In the bowl with the apples, add the granulated sugar, ground cinnamon, lemon juice, and all-purpose flour. Toss everything together until the apples are well coated. Set aside to let the flavors meld.

Crust Preparation

    Make the Dough

    In a large mixing bowl, combine 2.5 cups of all-purpose flour, 0.5 cups of granulated sugar, and 0.5 tsp of salt. Add 1 cup of unsalted butter (cut into small cubes) and mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add 6 tablespoons of cold water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes before rolling out.

Assembly and Baking

    Preheat your oven to 425°F (220°C).
