Trim
Rinse the tenderstem broccoli under cold water and pat dry. Trim any tough ends (about 1/4–1/2 inch) and remove any yellowed leaves. If some stems are much thicker, slice them lengthwise so pieces are a similar thickness for even cooking.
Peel and thinly slice the garlic cloves. Halve the lemon and set aside.
Cook
Blanch (optional, for brighter color and tender-crisp texture)
Bring a large pot of salted water to a rolling boil (use about 1 tsp salt per liter). Add the tenderstem and cook for 1 minute until bright green and slightly tender. Immediately transfer to a bowl of ice water to stop cooking, then drain and pat dry. (If you prefer more char and a softer bite, skip this step and proceed directly to sautéing.)
Sauté garlic
Place a large skillet or frying pan over medium heat. Add 2 tbsp extra-virgin olive oil and allow it to warm for about 30 seconds until shimmering but not smoking. Add the sliced garlic and cook, stirring frequently, for 30–60 seconds until fragrant and just golden at the edges. Watch carefully to avoid burning the garlic.
Cook tenderstem
Add the drained (or unblanched) tenderstem broccoli to the pan. Increase heat to medium-high and toss to coat with the garlic oil. Cook, turning occasionally, for 4–6 minutes until the stems are tender when pierced with a fork and some florets have light charred spots. If you blanched earlier, 2–3 minutes of sautéing is usually enough to heat through and add color.
Season and finish
Season with 1 tsp sea salt, 1 tsp freshly ground black pepper, and 1/4 tsp red pepper flakes (if using). Squeeze the juice of half a lemon over the tenderstem and toss to combine. Taste and adjust seasoning—add more salt, pepper, or lemon juice as desired. If using, sprinkle 2 tbsp toasted nuts and/or 2 tbsp grated Parmesan or crumbled feta over the top before serving.
Serve
Transfer to a serving plate while hot. Serve as a side dish with grilled meats, fish, or as part of a vegetable platter. Leftovers keep refrigerated in an airtight container for up to 3 days and can be reheated briefly in a skillet or enjoyed cold.
