Method
Prepare Glass & Aromatics
Chill and bruise mint
Chill a large wine glass or tumbler in the freezer for 5 minutes. Place the mint leaves in the palm of your hand and clap once to lightly bruise them and release the aroma (do not pulverize). Add the mint gently to the chilled glass.
Add the lime wheel or wedge to the glass, tucking it beside the mint so it infuses the drink while remaining decorative.
Build the Cocktail
Combine syrups and juice
Pour the elderflower cordial (and elderflower liqueur if using), fresh lime juice, and simple syrup (if using) into the glass over the mint and lime. Gently stir once with a bar spoon to combine and lift the mint slightly without shredding it.
Add ice
Fill the glass with large ice cubes or crushed ice up to near the rim. Large cubes slow dilution; crushed ice chills faster and gives a different mouthfeel—choose per preference.
Top with bubbles
Slowly pour the chilled Prosecco into the glass to preserve effervescence, then add the club soda or sparkling water. Stir very gently once to integrate; avoid vigorous stirring to keep the bubbles lively.
Finish & Serve
Garnish by lightly slapping a sprig of mint between your hands and placing it on top for aroma. Optionally, run the lime wedge around the rim before dropping it in.
Serve immediately with a short straw or stirrer so the drink can be lifted from the bottom to maintain balance of syrup and bubbles as you sip.
