Method
Marinade Preparation
- 1
Prepare the Marinade
In a large mixing bowl, combine the plain yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, paprika, garam masala, turmeric powder, cayenne pepper, salt, black pepper, and vegetable oil. Mix well until all ingredients are thoroughly combined.
- 2
Marinate the Chicken
Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for deeper flavor.
Cooking
- 3
Preheat the Tandoor
If using a traditional tandoor oven, preheat it according to the manufacturer's instructions. If using an oven, preheat to 475°F (245°C).
- 4
Cook the Chicken
Remove the marinated chicken from the refrigerator. Skewer the chicken pieces (if using a grill) or place them directly on a baking tray lined with foil. Cook in the tandoor for about 20-25 minutes, turning halfway through. If using an oven, bake for 25-30 minutes or until the chicken is cooked through and has a nice char.
- 5
Check for Doneness
Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (75°C).
- 6
Rest and Serve
Let the chicken rest for 5 minutes before serving. Serve hot with naan, rice, and your favorite chutney.
