Method

Pasta Preparation

  1. 1

    Boil the Water

In a large pot, bring water to a boil. Add 1 tablespoon of salt to the boiling water.

  2. 2

    Cook the Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti and set aside.

Sauce Preparation

  1. 4

    Cook the Pancetta

In a large skillet over medium heat, cook the pancetta until it becomes crispy, about 5-7 minutes. Remove from heat and set aside.

  2. 5

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Combine and Serve

  1. 6

    Combine Pasta and Pancetta

Add the drained spaghetti to the skillet with the pancetta and toss to combine, ensuring the pasta is well coated with the pancetta fat.

  2. 7

    Add Egg Mixture

Remove the skillet from heat and quickly pour the egg mixture over the pasta. Toss continuously to create a creamy sauce, adding reserved pasta water as needed to achieve desired consistency.

  3. 8

    Serve

Divide the spaghetti carbonara onto plates, garnish with fresh parsley, and serve immediately.
