Prepare the Filling
In a bowl, combine the shrimp, cream cheese, tobiko, green onion, garlic, salt, and pepper. Mix until well incorporated.

Assemble the Wontons
Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the filling in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press the edges to seal. You can also fold the two corners of the triangle together to form a dumpling shape if desired.

Cooking the Wontons
Bring a pot of water to boil. Gently drop the wontons into the boiling water and cook for about 4-5 minutes or until they float to the surface. Remove and drain.
