    Prepare the Caramel

    In a saucepan, combine granulated sugar and 2 tablespoons of water over medium heat. Stir until the sugar dissolves, then stop stirring and allow it to cook until it turns a deep amber color. Remove from heat and carefully add heavy cream and salt, whisking until smooth. Set aside to cool slightly.

    Mix Egg Yolks

    In a mixing bowl, whisk together the egg yolks and vanilla extract until well combined.

    Combine Mixtures

    Once the caramel has cooled slightly, slowly pour it into the egg yolk mixture while whisking continuously. Make sure to whisk thoroughly to avoid scrambling the yolks.

    Prepare for Baking

    Preheat the oven to 325°F (160°C). Pour the mixture into ramekins or custard cups. Place the ramekins in a baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

    Bake

    Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center is still slightly jiggly. Remove from the oven and let cool. Refrigerate for at least 2 hours.

    Caramelize the Top

    Before serving, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crispy crust. If you don’t have a torch, you can broil them in the oven for a few minutes.

    Sprinkle a pinch of salt on top of each crème brûlée and serve immediately.
