Brine the Chicken
Submerge the chicken breasts in the cooled brine and refrigerate for at least 4 hours, preferably overnight.
Cooking the Chicken

Prepare for Frying
In a bowl, whisk together flour, paprika, salt, and pepper. In another bowl, beat the eggs and mix in buttermilk.

Coat the Chicken
Remove chicken from brine and pat dry. Dip each piece in the egg mixture, then coat with the flour mixture.

Fry the Chicken
Heat oil in a large skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Prepare the Jam
In the same skillet, add diced onion and cook until soft. Stir in brown sugar, bourbon, apple cider vinegar, and black pepper. Simmer until thickened, about 10 minutes. Stir in the bacon.
White BBQ Sauce

Mix the Sauce
In a bowl, mix together mayonnaise, apple cider vinegar, honey, black pepper, and salt until smooth.

Assemble the Sandwich
Spread white BBQ sauce on the toasted buns, top with fried chicken, bourbon bacon jam, and Wickles. Serve immediately.
