    Prepare the Mushrooms

    Preheat your oven to 375°F (190°C). Remove the stems from the mushrooms and finely chop them. Set the mushroom caps aside.

    Make the Filling

    In a skillet, heat olive oil over medium heat. Add the chopped mushroom stems and minced garlic, sauté until softened. In a bowl, combine ground veal, goat cheese, sautéed stems, parsley, breadcrumbs, salt, and pepper. Mix thoroughly.

    Stuff the Mushrooms

    Using a spoon, fill each mushroom cap generously with the veal and goat cheese mixture.

    Bake the Mushrooms

    Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20-25 minutes, until the veal is cooked through and the mushrooms are tender.

    Prepare the Mornay Sauce

    While the mushrooms are baking, melt 2 tablespoons of butter in a saucepan over medium heat. Stir in 2 tablespoons of flour and cook for 1 minute. Gradually whisk in 1 cup of milk. Continue whisking until thickened. Remove from heat and stir in 1 cup of shredded smoked Gouda cheese until melted. Season with salt and pepper to taste.

    Drizzle the smoked gouda mornay sauce over the baked stuffed mushrooms and serve hot.
